Vegetable Lentil Loaf

As part of my health kick I have tried to limit my meat intake and incorporate more vegetarian and vegan meals. One of my favorite dishes since I was a kid has been meatloaf. So I was determined to find a vegetarian friendly recipe that would combine the aspects I love about this dish but with the nutritional benefits. I stumbled across the blog “The Simple Veganista,” and based off the comments she got from posting this recipe I knew I had to try it.

It was very easy to make, it just took some time (give yourself about an hour and a half). In my honest opinion, I liked this version better than actual meatloaf . The glazing on the top is what sets it apart from any other recipe. The lentil loaf went great with quinoa and mediterranean mixed veggies on the side. Definitely becoming a regular meal in the Moller household!
